The scent of bread is like the scent of home – seasoning bread

Everyone loves the smell of freshly baked bread. So tempting that you want to cut off a slice right away.

But where does this inviting smell come from?

In the past, bread was made only from flour, water and a bit of salt. It was not until much later that spices began to change the taste and different spice blends and bread recipes developed in the various countries and regions. This knowledge was often shared only by the grandmother through the mother to the daughter.

 

The fact that bread also smells really good is due to 3 factors:

The classics for bread spice are the:

  • appetizing and digestive caraway
  • gastrointestinal tract supporting anise
  • calming fennel
  • appetizing and digestive coriander

 

Thus, bread spices are crucial not only for good taste, but also health-promoting, since first the appetite and then the digestion are stimulated.

Mixing these four ingredients in the same proportion (for example 2 tablespoons full) you have the classic Austrian bread spice at hand. Depending on whether it is to be a strong or mild bread, one to two tablespoons of bread spice are mixed per 500 grams of flour.

As always, it is best if the spices are freshly ground. With your Salzburg grain mill you can grind the wanted amount with the grain.

It goes without saying that these freshly ground spices produce a different smell and taste than pre-packaged spices, which usually store for weeks or months in the shops.

If you have a grain mill, mix the various spices and add them to the grain for grinding. Grinding grain and spices is a prerequisite for top-level baking. It is no longer necessary to stock the spices and store them in a container, because storing always means a loss of the delicious, original flavor!
